Put small pieces of Hot Smoked Salmon into Ramekin with a few Prawns
or small pieces of Cold Smoked Salmon or both!

Fill the Ramekin with Double Cream to fully cover the Salmon pieces.
Grate cheese or your choice on top of the cream.

| Put the Ramekins on a "Bain Marie"
and place in the oven until the cheese has melted and the mixture piping hot. Serve
hot.

Blend Hot Smoked Salmon with Mayonnaise, Lemon Juice, Back Pepper,
Chives or Spring Onions and perhaps Double Cream!

Mix and add the ingredients to taste. You could also add soft cream
cheese if you wish. Refrigerate the Mousse in tubs.

|
Serve cold on Cocktail Biscuits / Toast with half a Cherry Tomato
or as a Starter with Salad. Make a Roulade with Smoked Salmon.
